Title: Turkey Stir-Fry

Don't know what to do with that turkey after Thanksgiving?  Think STIR-FRY!!!

Mick and I have been on a diet for the past week so our meals have been different in some aspects to accommodate for calorie allowances.  I created this meal last night for just myself.  Today, I created the same meal for both of us at lunch and increased the ingredient amounts accordingly.

Single Person Recipe:

1/4 cup          turkey stock (stock is the best because it has No MSG, though you can use gravy)
1/8 cup          water (if using gravy, increase to 1/4 cup to thin the flour)
3 oz                turkey, white and dark meat - torn, not chopped
1/3 cup          frozen mixed vegetables (leftovers work good too)
1 oz                Water Chestnuts  //*I used the remaining can of chestnuts for the two of us the next day.*//
2 Tbsp            Kikomann Soy Sauce (No MSG)
1 Package     Ramen Noodles  NOODLES ONLY  Throw that damn pack of MSG away!!!
OR
2 oz                 Spaghetti/Angel Hair Pasta


In a fry pan, add turkey stock, water, and soy sauce.  Bring to a boil.  Meanwhile, put a pan of water on the stove for the pasta.  Remember, pasta is going to take longer than ramen noodles.  Once fry pan ingredients are boiling, add turkey and what ever spices you prefer.  (I used fresh ground pepper and onion powder.)  Bring back to a boil.  Your water for pasta should be ready - Add pasta.  Add chestnuts and vegetables to turkey.  Let liquid evaporate a bit, but not totally.  When pasta/noodles are done, everything should be done.  Drain pasta/noodles.  Put pasta/noodles in bowl, cover with turkey stir-fry.  If desired, add more soy sauce.


For more than one person, multiply the ingredients above with the number of people you are cooking for.  Pretty basic.  There is plenty of room for variation.
