Nicholasville (KY): Alltech Partners to Develop a New Alternative to MSG

Nicholasville-based Alltech has partnered with two Japanese companies to produce a new alternative to monosodium glutamate (MSG) and other food enhancers.

Alltech’s partnership with the Mitsui USA and Asahi Breweries will create a joint venture company that will trade as Advanced Yeast Technologies Japan. Alltech, which has more than 28 years of experience in the area of yeast production, will provide the research and development required to bring the partnership’s products to the commercial market.

In addition to its research capabilities, Alltech owns the world’s largest yeast factory in São Pedro, Brazil, and the company’s Serbian yeast manufacturing plant is also capable of supplying the marketplace with product.

Alltech President Pearse Lyons said the new product is expected to bring about an expansion of the company’s research staff in Nicholasville and could possibly lead to the need for more manufacturing plants in Kentucky and Brazil.

The target market for the new product – which has not yet been named – is a growing middle-class population in Southeast Asia, India and China who are looking for healthier food at a reasonable cost, Lyons said.

Mitsui will handle product sales in Europe and America, while Asahi will be in charge of sales in Asia. The companies expect sales of up to $200 million by 2014.

MORE INFORMATION:

Alltech is a feed company for livestock and pet foods. They produce yeast additives.

Mitsui USA is an international trading company.

Asahi Breweries is a Japanese beer company.  Under Products...
YEAST:: To make Super Dry beer, we use a rare yeast, the Asahi yeast strain No. 318, which not only yields outstanding fermentation, but produces a complex aroma that results in an elegant and sophisticated flavor and ensures Super Dry’s pure, crisp, dry taste.
Yeast are sensitive micro-organisms, and their conditions constantly change during fermentation. Creating an optimal environment for yeast to “do their best job” for beer-making depends on the beer brewer’s technology. We are ceaselessly developing new technologies to pursue a more sophisticated, clear, KARAKUCHI taste.

So, What do we have here?  A yeast distribution system.  And what do we know about yeast?  It can be autolyzed which is a form of excitotoxin.  What is the mystery "New Alternative to MSG"?  I don't know.  But when I figure out the answer, I'll be sure to let you know.
