Frankfurt - Glutamate, a flavour enhancer often included in Asian cuisine, can sometimes lead to nausea and headaches. China food syndrome, as the problem is called, can also crop up after eating pre-packaged foods, says Wolfgang Wesiack, president of the Professional Association of German Internists.
The issue is not an allergy, but glutamate intolerance.
Anyone who has shown sensitivity to the substance should be careful about what they eat. The body can absorb glutamate especially quickly from soups, which can lead to health problems, says Wesiack.
The problem can lead to reddening of the skin, a feeling of tightness in the chest, shivers and muscle pain. In children, symptoms include fever, confusion and bouts of anxiety. The symptoms usually go away within half a day.
The presence of glutamate can usually be discerned thanks to the use of symbols like E620 or E625 or the word monosodium glutamate (MSG). The presence of yeast extract, tomato puree or spices can also be a clue to the presence of glutamate.
Wesiack recommends asking specifically about the presence of glutamate when ordering food in restaurants.
